DRUNKEN MUSSELS

2 tbs butter

6 cloves garlic, minced

1 tsp red pepper flakes, or cayenne pepper

zest of one lemon

2 1/2 cups white wine

1/2 tsp sea salt

1 tbs pepper

1 tbs cumin

2 1/2 lbs mussels, cleaned and debearded

1 cup parsley, chopped coarsely

Melt butter in a large, heavy pot (I use my cast-iron Dutch oven) over medium heat. Add garlic and let cook for about one minute. Season with red pepper flakes (or cayenne, which has a more concentrated heat) and lemon zest, and stir. Pour in the wine and add seasonings. Bring to a boil and stir in mussels. Quickly cover the pot and, using your pot-holders to protect your hands, shake your pot for about ten seconds, and then let boil for about a minute. Stir mussels, and replace cover, letting it boil for about two more minutes until shells begin to open. Stir in parsley, cover pot again, and cook about three more minutes, until all shells are open.

NOTES: For a little acidity, squeeze some lemon over the mussels before serving. These are delicious on their own, but also taste fantastic with some crusty bread to soak up the juice.

Muscles don’t make the man, but mussels definitely make the dinner!
